Pre-cooking of french fries and ventilation

The fries are shaped from Bintje potatoes. They first go through a pre-cooking in oil between 135° and 140° which lasts between 6 and 7 minutes. At the end of this phase, they naturally rise to the surface. They are taken out of the fryer using a special tray. This tray is perforated, which allows the oil to run off immediately, the oil is then recovered directly in the tank.
